Kosher Flor de Primavera Aged is a red wine blend of Grenache (50%), Cabernet Sauvignon (30%) and Samsó (20%) of old vineyards located on terraces with clay and granite floors.
TASTING NOTE
Intense cherry color. Really complex wine with aromas of ripe fruit, strokes of minerality and toasted barrel delicately integrated. Character decidedly elegant, with body, very balanced and excellent acidity.
VINIFICATION
Vinified under the strict supervision of the rabbi of the Habat Jewish community of Barcelona. This is a high-certified Kosher wine: Lo mebushal (not pasteurized) and Le Pessaj (suitable for Jewish Passover). Fermentation at controlled temperature (24-28ºC) and maceration for 28 days. All varieties of grapes are vinified at the same time. Beginning of malolactic fermentation in tank and finishing in barrel. Smooth filtration.
AGING
Aging for 12 months in new and 1 year old Kosher French oak barrels, toasted medium and light. Later aging in tank for 3 months before bottling.
PAIRING
Ideal to take with a piece of meat. It goes well with grilled steak or pepper, lamb meat, pork medallion, rabbit, octopus, etc.
