Calcari is a white wine of organic monovarietal cultivation, 100% Xarel·lo from the Parés Baltà Estate at 254 m. at sea level.
TASTING NOTE
Very pale yellow straw color. Crisp and transparent. Aroma of medium intensity with nuances of pear and banana. The palate fills us with memories of a Tatin cake with pears on a creamy English background.
VINIFICATION
After a light film maceration of 4 hours, the grapes are gently pressed and fermented in stainless steel tanks at 16ºC for 3 weeks. Aging of 4 months with lees with daily battonage.
PAIRING
Ideal to accompany baked or grilled white fish, seafood, complex salads, smoked fish, rice dishes and cheeses.
